This chai-spiced apple crisp has all the cozy fall magic. Sweet apples bubbling away under a golden oat topping, filling the kitchen with that warm farmhouse smell. It’s simple, rustic, and exactly the kind of recipe that belongs on a fall table.
Instead of making classic apple crisp with just cinnamon, I decided to give this one a little twist. I stirred in my own homemade chai spice mix, a blend of cinnamon, cardamom, ginger, cloves, and even a touch of pepper.
The result is a cozy apple crisp that feels both familiar and new. The warm chai spices bring out the natural sweetness of the apples and makes everyone stop and ask, what’s in this? Whether you bake it in a cast iron skillet or portion it out into little mason jars, this chai spiced apple crisp is the perfect way to celebrate apple season.
Ingredients for Chai-Spiced Apple Crisp
For the Filling:
- 6 medium apples (about 6 cups, peeled and sliced – Granny Smith + Honeycrisp are a good mix)
- 1/4 cup brown sugar
- 1 tablespoon of all-purpose flour
- 1 tablespoon lemon juice
- 2 teaspoons homemade chai spice mix
- Pinch of salt
For the Topping
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup chopped pecans or walnuts (optional)
Instuctions
Preheat oven to 350° F (175° C). Lightly grease a 9×9 dish or a medium cast iron skillet.
In a large bowl, toss apples with brown sugar, flour, lemon juice, chai spice, and salt. Spread evenly in your baking dish.

In another bowl, stir together oats, flour, brown sugar, salt, and nuts. Cut in the butter until crumbly.

Sprinkle the topping evenly over the apples.

Bake for 40 to 45 minutes, until the apples are tender and the topping is golden.

Let it cool just a bit before serving. Enjoy warm with vanilla ice cream, whipped cream, or even a drizzle of caramel.
Tips & Variations
- Make it rustic: Bake in a cast iron skillet for that farmhouse look.
- Add more spice: Sprinkle extra chai spice on top before baking for a stronger flavor.
- Vegan option: Swap butter for plant-based butter and serve with dairy-free ice cream.
- Make ahead: Assemble, cover, and refrigerate for up to 24 hours before baking.

FAQ
What kind of apples are best? I like to use a mix of Granny Smith for tartness and Honeycrisp for sweetness. Any firm baking apple will work.
Can I use store-bought chai spice? Yes, but homemade tastes fresher (and you can adjust the flavors). Try my Homemade Chai Spice Mix.
Can I freeze apple crisp? Yes! Bake it first, cool completely, then wrap tightly and freeze for up to 3 months. Reheat in the oven until warm.

Notes

Hi, I’m Renee. I’m a farmer’s wife, a mom of two, and an introvert with the occasional burst of extrovert energy. Most days you’ll find me in the kitchen surrounded by flour, jars, or something bubbling away on the stove. I love the rhythm of the seasons, the coziness of home, and finding joy in the little things (like the first cup of coffee or fresh bread still warm from the oven).

This is so up my alley, wow, love it.
