Method
- In a large pot, melt butter
- Add onion and sauté until translucent
- Add garlic and sauté until fragrant
- Sprinkle in flour and cook for a minute
- Stir in 1 cup of chicken broth and cook for a minute
- Add in broccoli and carrots and stir to combine
- Stir in the remaining chicken broth along with the heavy cream
- Reduce heat to low, cover pot with lid and simmer for about 20 minutes.
- Stir in cheese and allow to melt
- Season to taste with salt and pepper
