Method
- In a large pot, melt butter
- add onion and sauté until translucent
- add garlic and sauté until fragrant
- sprinkle in flour and cook for a minute
- stir in 1 cup of chicken broth and cook for a minute
- add broccoli and carrots and stir to combine
- stir in the remaining chicken broth along with the half and half
- reduce heat to low, cover pot with lid and simmer for about 20 minutes.
- stir in cheese and allow to melt
- season to taste with salt and pepper
