Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 3 tsp chai spice see notes for substitutions
  • 1 cup pumpkin puree
  • cups milk
  • 2 eggs
  • 4 tbsp melted butter or a neutral oil
  • 1 tsp vanilla extract

Method
 

  1. Preheat waffle iron and light grease.
  2. Whisk together flour, brown sugar, baking powder, baking soda, salt, and chai spice.
  3. In another bowl, whisk pumpkin puree, milk, eggs, butter and vanilla until smooth.
  4. Combine wet and dry ingredients, stirring just until mixed.
  5. Cook on a waffle iron until golden and crisp.

If you don't have chai spice on hand you can use:
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
