Pecan Chocolate Chip Cookies with Caramel

Ingredients
  

  • 1 cup butter softened
  • 2 tbsp vegetable oil
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp salt
  • ½ tsp baking soda
  • 2 tbsp cornstarch
  • cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • ½ cup pecans chopped
  • ½ cup caramel bits

Method
 

  1. Preheat oven to 350℉. Line baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together butter, oil, brown sugar, and sugar until light and fluffy.
  3. Beat in eggs and vanilla until smooth.
  4. In a separate bowl, whisk together flour, salt, baking soda, and cornstarch. Slowly mix into wet ingredients until just combined.
  5. Fold in chocolate chips, pecans, and caramel bits.
  6. Scoop dough into rounded tablespoons and place 2 inches apart on prepared baking sheets.
  7. Bake 10-12 minutes, until the edges are golden but the centers still look slightly soft.
  8. Cool for 5 minutes on the pan before transferring to a wire rack to cool.
