Method
- Preheat oven to 375℉. Lightly grease a small baking dish.
- Melt butter in a skillet over medium heat. Add onion or shallot and cook until soft, about 3 to 4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Lower heat and stir in cream cheese until smooth. Add sour cream and mix well.
- Stir in white cheddar and Parmesan until melted.
- Fold in spinach, salt, pepper, and red pepper flakes if using.
- Transfer mixture to a baking dish.
- Bake for 20 to 25 minutes until hot and bubbly.
- Serve warm.
Notes
- Be sure to squeeze the spinach dry to prevent a watery dip.
- Freshly shredded cheese melts best.
