Ingredients
  

  • 2 tablespoons butter
  • 1 small onion or shallot very finely diced
  • 3 cloves garlic minced
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • 1 cup white cheddar cheese freshly shredded
  • ½ cup grated Parmesan cheese
  • 10 ounces frozen chopped spinach thawed and squeezed dry
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • pinch of red pepper flakes optional

Method
 

  1. Preheat oven to 375℉. Lightly grease a small baking dish.
  2. Melt butter in a skillet over medium heat. Add onion or shallot and cook until soft, about 3 to 4 minutes.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Lower heat and stir in cream cheese until smooth. Add sour cream and mix well.
  5. Stir in white cheddar and Parmesan until melted.
  6. Fold in spinach, salt, pepper, and red pepper flakes if using.
  7. Transfer mixture to a baking dish.
  8. Bake for 20 to 25 minutes until hot and bubbly.
  9. Serve warm.

Notes

  • Be sure to squeeze the spinach dry to prevent a watery dip.
  • Freshly shredded cheese melts best.
