Garlic Butter Rice with Kale

Easy, flavorful side dish made with pantry staples and fresh greens

Ingredients
  

Kale
  • 4 cups fresh kale
  • 2 tbsp olive oil
  • salt and pepper
Rice
  • 3 tbsp butter
  • 3 cloves garlic minced
  • 1 cup white rice
  • 2 cups chicken broth

Method
 

  1. Chop kale into smaller pieces and place in a large bowl. Drizzle olive oil over the kale and add a pinch each of salt and pepper. Massage kale with your hands for about 30 seconds and set aside.
  2. Melt butter in a large pan. Add garlic and saute for a minute.
  3. Add rice and chicken broth. Add lid to pan and simmer on low for about 10 to 15 minutes.
  4. Turn off heat and add kale. Place lid on pan and rest for 10 minutes.
  5. Stir kale into rice. Taste and adjust seasoning as needed.
