Fresh Fruit Salad with Honey Lime Dressing

This fresh fruit salad with honey lime dressing is made with strawberries, blueberries, kiwi, pineapple, grapes, and fresh mint. It is a bright and easy summer side dish for cookouts, brunch, picnics, and potlucks.

Ingredients
  

  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 2 kiwis peeled and sliced or diced
  • 2 cups diced pineapple
  • 1 1/2 cups grapes halved
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 to 2 tablespoons fresh mint finely chopped

Method
 

  1. Wash and dry all fruit well.
  2. Slice the strawberries, peel and cut the kiwi, dice the pineapple, and halve the grapes.
  3. Add the strawberries, blueberries, kiwi, pineapple, and grapes to a large bowl.
  4. In a small bowl, whisk together the honey, lime juice, and lime zest.
  5. Stir the chopped fresh mint into the dressing.
  6. Pour the dressing over the fruit.
  7. Gently toss until the fruit is lightly coated.
  8. Serve right away, or chill for 20 to 30 minutes before serving.

Notes

  • For the best texture, add the dressing close to serving.
  • Fresh pineapple works best, but canned pineapple can be used if it is well drained.
  • Use 1 tablespoon of mint for a lighter flavor or 2 tablespoons if you want the mint to stand out more.
  • This fruit salad is best the day it is made.
