- 4 boneless chicken breasts
- 4 slices bacon cooked
- 1 cup mushrooms sliced
- 1½ cups shredded Colby Jack or cheddar cheese
- 2 tbsp olive oil or butter

Honey Mustard Sauce
- ½ cup mayonnaise
- ¼ cup honey
- ¼ cup Dijon mustard
Step 1: Make the honey mustard sauceIn a small bowl, whisk together mayonnaise, honey, and Dijon mustard until smooth. Set aside. Step 2: Cook the bacon and mushroomsIn a large skillet, cook the bacon until crispy. Remove and set aside. In the same pan, sauté the mushrooms in a little butter or olive oil until tender. Step 3: Sear the chickenSeason the chicken breasts with salt, pepper, and paprika. In the same skillet, heat a drizzle of olive oil and sear the chicken on both sides until golden brown, about 4-5 minutes per side. Step 4: Smother with toppingsSpread a spoonful of honey mustard sauce over each chicken breast. Top with bacon, mushrooms, and generous layer of shredded cheese. Step 5: Bake until bubblyTransfer the skillet (or use a baking dish) to a 350° F oven and bake for 20-25 minutes, or until chicken is cooked through (internal temp 165°F) and the cheese is melted and bubbling.
