Easy Strawberry Icebox Cake

This easy strawberry icebox cake is made with layers of graham crackers, creamy vanilla pudding filling, whipped cream, and fresh strawberries. It is a simple no-bake dessert that chills into soft, cake-like layers.

Ingredients
  

  • 1 box graham crackers
  • 1 box instant vanilla pudding mix 3.4 ounces
  • 2 cups cold milk
  • 1 cup heavy cream
  • 2 to 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 1 1/2 pounds fresh strawberries hulled and sliced

Method
 

  1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until thickened. Set aside.
  2. In a separate bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  3. Gently fold the whipped cream into the prepared pudding until smooth and creamy.
  4. Spread a thin layer of the pudding mixture in the bottom of an 8x8 or 9x9 dish.
  5. Add a single layer of graham crackers, breaking pieces as needed to fit.
  6. Spread a layer of pudding mixture over the graham crackers.
  7. Add a layer of sliced strawberries.
  8. Repeat the layers, ending with pudding mixture and strawberries on top.
  9. Cover and refrigerate for at least 4 hours, or overnight for the best texture.
  10. Slice and serve chilled.

Notes

  • For cleaner slices, chill the cake overnight before cutting.
  • If using a 9x13 dish, you may want to double the filling or use extra strawberries and graham crackers.
  • This dessert is best served within 1 to 2 days.
