Ingredients
  

For the beef
  • 2 pounds ground beef
  • 4 to 6 cloves garlic minced
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 1/4 cup chopped chives or sliced green onions
For the sriracha mayo
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoons sriracha
  • 1 teaspoon rice vinegar or lime juice optional
For serving
  • Cooked rice
  • Sliced cucumbers
  • Shredded carrots
  • Avocado
  • Sesame seeds

Method
 

  1. Cook rice according to package directions.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease if needed.
  3. Add minced garlic and cook for 30 seconds.
  4. Stir in brown sugar, soy sauce, sesame oil, ginger, black pepper, and red pepper flakes if using.
  5. Simmer for 2 to 4 minutes, stirring often, until the sauce thickens slightly and coats the beef.
  6. Stir together mayonnaise, sriracha, and rice vinegar or lime juice in a small bowl.
  7. Serve the beef over rice with toppings and drizzle with sriracha mayo.

Notes

  • Chives can be used instead of green onions
  • For a less sweet version, reduce brown sugar to 1/3 cup
  • Store leftovers in the fridge for up to 4 days
