Ingredients

  • 1 lb maple breakfast sausage
  • 1 medium bell pepper diced
  • 1 medium onion diced
  • 7 large eggs
  • 2 cups milk
  • 4 cups bread cubed
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method

Cook the sausage and veggies
  1. In a skillet over medium heat, cook the maple sausage until browned and fully cooked. Drain excess grease if needed.
Prepare the egg mixture
  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Assemble the casserole
  1. Grease a 9x13 baking dish.
  2. Add the cubed bread, cooked sausage, and shredded cheese. Pour the egg mixture evenly over the top.
  3. Gently press everything down so the bread soaks up the liquid.
Bake
  1. Bake at 350°F for 40–45 minutes, or until the center is set and the top is lightly golden.
  2. Let it sit for about 5–10 minutes before slicing.
