Ingredients
  

Bread
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup sugar
  • ½ teaspoon salt
  • zest of 1 orange
  • ½ cup milk or orange juice
  • cup oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries toss in 1 tablespoon of flour before adding to the batter to prevent sinking
Orange Glaze
  • ¾ cup powdered sugar
  • 1 - 2 tablespoons fresh orange juice
  • ½ teaspoon orange zest optional for stronger orange flavor

Method
 

  1. Preheat oven to 350℉. Grease or line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, sugar, and orange zest.
  3. In another bowl, combine milk (or orange juice), oil, egg, and vanilla.
  4. Fold in cranberries, gently coating them in flour before mixing into the wet ingredients.
  5. Add wet to dry ingredients and stir just until blended. Don't overmix.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake 55 - 65 minutes, or until a toothpick comes out clean.
  8. Cool for 10 minutes in the pan, then move to a wire rack.
  9. Whisk glaze ingredients and drizzle over cooled loaf.
