Ingredients
  

  • 1 8.5 ounce box Jiffy Corn Muffin Mix
  • 1 15 ounce can whole kernel corn drained
  • 1 14.75 ounce can cream-style corn
  • 1 cup sour cream
  • ½ cup butter (1 stick) melted
  • 2 tablespoons honey
  • 2 eggs
  • ½ teaspoon salt

Method
 

  1. Preheat oven to 350℉. Grease an 8x8 or 9x9 inch baking dish.
  2. Mix the batter: In a large bowl, combine Jiffy mix, whole kernel corn, creamed corn, sour cream, melted butter, honey, eggs, and salt. Stir just until everything is incorporated. Don't overmix.
  3. Bake: Pour into the prepared baking dish and bake for 45 - 50 minutes, until the top is golden brown and the center is set.
  4. Cool slightly: Let rest for 5 -10 minutes before serving.
