Ingredients
  

  • cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • tsp apple pie spice or 1 tsp cinnamon, nutmeg + pinch allspice
  • 1 egg large
  • cups buttermilk or milk + 1 tsp vinegar
  • 2 tbsp melted butter or neutral oil
  • 1 tsp vanilla extract
  • 1 cup apple finely diced (Honeycrisp, Gala, Fuji)

Method
 

  1. Mix dry: In a medium bowl whisk flour, sugar, baking powder, baking soda, salt, and apple pie spice.

  2. Add wet: Whisk egg, buttermilk, melted butter, and vanilla until just combined. Batter should be thick with small lumps.

  3. Fold in apples: Gently fold in diced apple. If batter seems too thick, splash in 1-2 tbsp more milk.

  4. Cook: Heat a lightly oiled skillet over medium heat. Scoop 1/4 cup batter per pancake. Cook 2-3 minutes until bubbles form and edges look set, flip, then cook 1-2 minutes more.
  5. Serve: Stack warm with maple syrup and your favorite toppings.
