Ingredients
  

  • ½ cup butter softened
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • cups all purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 1 medium apple peeled and diced

Method
 

  1. Preheat your oven to 350 degrees F. Line an 8 x 8 inch baking pan with parchment paper.
  2. Cream the butter and sugars together in a large bowl until light and fluffy. Add egg and vanilla extract, mixing until smooth.
  3. Whisk together the flour, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
  4. Add dry ingredients to wet ingredients and stir just until combined. Gently fold in diced apples.
  5. Spread the batter evenly into your prepared pan.
  6. In a small bowl, mix the cinnamon and sugar topping. Sprinkle it evenly over the top of the batter.
  7. Bake for 25-30 minutes, or until the top is set and a toothpick comes mostly clear (a few moist crumbles are fine).
  8. Let cool before slicing.
