Apple Cranberry Bread with Steusel Topping

Ingredients
  

For the bread:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup brown sugar
  • ½ cup milk or buttermilk
  • cup oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup whole berry cranberry sauce
  • 1 apple peeled and diced to equal 1 cup
  • optional: ½ cup chopped pecans or walnuts
For the steusel:
  • 2 tablespoons butter melted
  • ¼ cup brown sugar
  • ¼ cup flour
  • ½ teaspoon cinnamon

Method
 

  1. Preheat oven to 350°F. Grease or line loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
  3. In another bowl, mix milk, oil, egg, vanilla, and cranberry sauce until smooth.
  4. Stir in diced apples (and nuts if using).
  5. Combine wet ingredients and dry ingredients just until blended. Don't overmix.
  6. Pour the batter into the prepared pan.
  7. In a small bowl, mix the streusel ingredients with a fork until crumbly, then sprinkle evenly over on top.
  8. Bake for 55-60 minutes, or until a toothpick comes out clean.
  9. Cool 10 minutes in the pan, then transfer to a wire rack to cool completely.
